Katie Leavitt...this one's for you! Veggie Slaw 4-4-11

This is such a yummy summer veggie idea. Perfect for BBQ's, picnic or just a side dish for dinner with the family. It's even better after it has set overnight.

Vegetable Slaw
3 cups shredded cabbage
5 plum tomatoes, seeded and chopped
1 cup fresh broccoli florets, cut small
1 cup cauliflower, cut small
1/2 cup chopped red onion

Dressing:
1/2 cup Greek Yogurt
1/4 cup low fat cottage cheese
1 Tbsp cider vinegar
3/4 tsp salt (optional)
1/4 tsp ground pepper

Pour dressing over veggie mixture. Toss to coat evenly and refrigerate.
